I just downloaded Shadow of Chernobyl with the french installer but the game (interface, texts) is in english!
Is there something to check ingame or something else to do with any file?

Check the Start menu for the game as there is a launcher where you can choose your preferred language :)

Does that mean that each installer comes with all languages? I'm hoping to set the game up with Russian audio and English subtitles (may require mods to do this) and I'm wondering if I need to download the Russian installer to get Russian audio, or if I can download the English installer and select Russian language later. Thanks!

SHadow of Chernobyl has a separate Russian installer, the rest are all-in-one :)

As the game doesn't support subtitles for all the spoken phrases it may not be the best choice to go for fully Russian audio anyway unless you have a very good understanding of the language (in which case you may just install the fully Russian version, though).

Well, it's an old thread, but I've done what you said and nothing changed for me : game is still in english (on a fresh install). I tried several languages and the two options "Save and close" and "Save and launch".
I even tried to turn off my antivirus during the manipulation, but it doesn't seem to change anything.
I don't see what's the problem... can someone help me ?

I'm having the same problem, although I'd be interested in playing the game in Spanish. I'm using the settings.exe for choosing the language I want and then trying both save and close and save and launch. None of those is working.

There is a possible workaround for Windows.

First start settings.exe and change the language back to english if another language is currently selected.

Then open the registry (win + r -> regedit) and navigate to the game entry.

Shadow of Chernobyl: HKEY_LOCAL_MACHINE\SOFTWARE\Wow6432Node\GOG.com\Games\1207660573
Call of Pripyat: HKEY_LOCAL_MACHINE\SOFTWARE\Wow6432Node\GOG.com\Games\1207660583
Clear Sky: HKEY_LOCAL_MACHINE\SOFTWARE\Wow6432Node\GOG.com\Games\1207660603

Note: for 32bit Windows just skip the Wow6432Node part.

Search the value for PATH. If it's not ending with a backslash add one.
e.g. "C:\GOG Games\S.T.A.L.K.E.R. Shadow of Chernobyl" must be changed to "C:\GOG Games\S.T.A.L.K.E.R. Shadow of Chernobyl\"

Now you can change the language with settings.exe as intended.
