I'm wondering because the black bars are starting to annoy me as of now, i don't mind them but it would be nice if i can get it to run at my full resolution.

It is possible.

http://www.wsgf.org/dr/dungeon-keeper-2 (just don't apply the 1.7 patch linked in there, the GOG release is more updated than that)

This comes with a quirk, though - the text in the upper text bar will be disproportionately small.
