Open dosboxDK_single.conf that is located in game directory file and search for the line:
keeper.exe
and add to it "-1player" after space bar, so it will look like this:
keeper.exe -1player
Save it, Launch Dungeon Keeper Gold, choose Multiplayer and than you'll get new option "1 player".
P.S.: The same applies for Deeper Dungeons, but this time do that for line deeper.exe analogically in dosboxDK_addon.conf.
